Mediterranean Frittata (Atkins Diet)

Ingredients:

8 pitted kalamata olives (black olives will do in a pinch)

1 med. zucchini, cut into 1/2″ cubes (about 2 cups)

1 sweet red pepper, diced

1/2 cup chopped onion

1/4 cup olive oil9 large eggs, lightly beaten

1/2 (4 ounce) package crumbled feta cheese

1/3 cup thinly sliced fresh basil

1/2 tsp salt

1/2 tsp freshly ground pepper

1/3 cup freshly grated Parmesan cheese

Garden Beef Stew (Atkins Diet)

Ingredients:

2 tbsp. vegetable oil

1 1/2 pd. stew meat

2 tbsp tomato sauce

2 c. water

1 tsp. salt

2 tbsp. chopped onion

1/4 c. chopped green pepper

1/4 c. chopped eggplant

1/4 c. zucchini, cubed

1/2 c. spinach

Cream of Mushroom Soup (Atkins Diet)

Ingredients:

8 ounces mushroom — white button, finely chopped

1/4 cup chopped onion — finely chopped

2 stalks celery — finely chopped

4 tablespoons butter

2 cups heavy cream

2 cans chicken stock

2 tablespoons flour

1 teaspoon salt

1/2 teaspoon pepper — to taste

How to Prepare:

In a large saucepan, melt butter over medium heat. Add finely diced veggies and saute, stiring occasionally, for about 5 minutes or until they wilt.

700g trimmed leeks, chopped

1tbsp plain flour

1.4l (2½ pints) chicken or turkey stock

142ml carton double cream

2 level tsp grainy mustard

225g Stilton, diced

Shavings of Stilton.

Curried Chicken

Ingredients:

500g cooked Chicken (skinned and deboned)
400g cooked Sweet potato (cubed)
Curry sauce:
5ml olive/canola oil
1 large onion
5ml minced garlic
2 tsp curry powder
3ml turmeric
5ml chicken spice
2ml salt
60ml brown grape vinegar
250ml water
15ml apricot jam

Curried Chicken

Method:

1. Prepare sauce by first frying the onions in a non-stick pan until brown. Then add all other spices and garlic, combining well
